The Woman Behind Maydan’s Michelin Star

Rose Previte is the chef and owner of some of D.C.’s most acclaimed restaurants like Compass Rose, Maydan, Kirby Club, and most recently, Medina. She also just published a cookbook that we have been tearing through. But what’s in the secret sauce?

An International Education

Before opening her first restaurant, Compass Rose, Previte spent three years traveling to over 30 countries. She transformed her findings into a new kind of fusion restaurant. Instead of fusing flavors in one dish, Compass Rose creates authentic dishes from different regions and presents them side by side.

Similarly, Maydan was born from Previte’s travels in the Middle East, featuring hearth-roasted veggies and traditional meats. All of her restaurants transport the diner to somewhere exciting, while still retaining a “home-cooked” feel.

Previte’s Culinary Style

As the daughter of a Sicilian father and a Lebanese mother, Previte leans toward Mediterranean cuisine in her cooking. She also has a soft spot for comfort food. “I'm not ashamed to tell you that ‘grandma food’ is my preferred style. Delicious, fresh, comforting, and made with love,” said Previte.

What To Expect From Medina

Previte opened Medina, her newest concept, a few months ago and reservations have been sold out since. The cocktail “cave” pulls from North African influences with classic mezze and creative cocktails (try The Daucus and Caspian Sea!).

“We call it Maydan's sassy little sister. Maydan has to be the big, responsible sibling, living up to the Michelin Star. But with Medina, it's cocktail-forward, relaxed, and encourages long, intimate conversations over drinks,” said Previte.
